Made by Doddington Dairy in Northumbeland, Berwick Edge is a robust and full flavoured hard cheese with undertones of pineapple and spice, and plenty of umami savouryness developed as it matures for at least 12 months.

Similar to the traditional Gouda cheese still made by the Dutch farmers in Holland today.

Recommended wine:  Domaine Mas Belles Eaux Petit Verdot
