Although it follows a Wensleydale style recipe it is notably different with an identity of its own. It matures as a smaller wheel, wrapped in nettle leaves and a light spray of white mould so the cheese texture and flavours develop to make it really distinct. The cheese tends to be creamier just next to the leaves and then crumblier in its core. It has a young, fresh, slightly tangy taste.
It pairs happily with both fruity whites and lighter reds. We recommend the Tabali Reserva Especial Chardonnay.
