2017 Wairau Valley, New Zealand
Organic and Biodynamic grapes, coming from â€˜forgottenâ€™ 25 year old vines in the Wairau Valley. Occasionally given the role as a bit part player in some top Sauvignon bottlings, Semillon has largely become extinct in the region, and we feel it deserves to play the leading role. The Semillon and Sauvignon Blanc (60% : 40%) were pressed directly together into a concrete egg, where the blend undertook a slow, natural fermentation and remained aging on lees for 12 months. The use of this small concrete vessel has accentuated the leafy, lanolin, wet stone character of the Semillon, and contributed wonderful texture and vibrancy to the wine.
