Manchego Cheese is a hard, buttery-tasting cheese, with a silky texture. It has an ivory-coloured interior punctuated by several small holes.
This crumbly texture dissolves in the mouth, so revealing the creamy richness of the ewes milk. This version is a semi curado - a younger Manchego aged for around 3 months. Flavours are fruity, grassy with a tangy note.
Classic pairing is with a Rioja, although the Ribera is also a worthy Spanish wine.
