Washed in a local perry, this has a delicious savoury flavour and beautiful gooey texture. A real treat.
A monastic type of cheese which owes its origin to the Cistercian order of monks who once farmed the pastures of Hunts Court Farm where it was launched in 1994. Washing the cheese (in the perry) is part of the ageing process and gives it a distinctive smell (stinky!) and taste - savoury, piney and sweet.
