It’s Salty, Funky and Hot. 

Chinese black beans form the base of this rāyu. Mixed with infused chilli and warming spices like star anise & cinnamon. A little goes a long way. 

PS. It’s also Michel Roux’s desert island ingredient. He says: “Other than a bottle of champagne for an emergency, the one thing I always have in my store cupboard is a jar of White Mausu Black Bean Rāyu... The black beans have such a depth of flavour, and the kick of chilli livens up any dish.”


Suitable for Vegans. Store in a cool dry place and stir really well before using. Made in a factory that also processes nuts.
